We use carefully selected local ingredients
From the food culture of Himeji, blessed with seafood and mountain produce, we emphasize local consumption. We use clear stream rice grown in our own rice fields at an elevation of 300 meters in Kami Town, Hyogo, bread baked in-house, miso from a local miso shop in the castle town, fish from the Harima Sea, and Hyogo beef, known for its high-quality wagyu. Our dishes are crafted with care, prioritizing local ingredients and the heartfelt effort of skilled hands.

Rice grown in our exclusive fields
The rice [Seiryu Rice] we serve at Higasa is cultivated in our exclusive farm located in Kami-cho, northern
Hyogo prefecture. We chose this location for its exceptional water quality, which is crucial to the quality
of rice. The farm is located in the mountains at an altitude of 700 meters. "Fresh air, snowmelt water, and
fertile soil are key ingredients for delicious rice," says the farm manager, Mr. Yoshida.
Our staff also participates in planting and harvesting. Good rice is the foundation of Japanese cuisine, and
knowing who grows it adds to its flavor. Feel free to ask for seconds!
